
Whether or not you call it a wrap or a burrito this is one pretty incredibly filling breakfast. I could go either way on the naming. I guess it depends on my mood & what I’m filling it with. In this case, I’m gonna go with wrap!
Breakfast is kinda my thing. Even though I’m not really even a breakfast person per say, I’ve been told I make a pretty mean one. Actually, I’ve been told & I’ve been paid. My first job ever! 14 at a local bagel shop called Ronnies Hot Bagels and Cafe. I learned a lot about food at that job. Particularly about making breakfast. Guess who was always called in to start the 5am shift. Yup, the young bagel shop newbie desperate for a paycheck.

I’d like to mention:
1. Don’t over work the eggs. Make ribbons like I mention in the video below. Before adding them to the pan, be my guest & scramble away. As a matter of fact, the more you scramble the better. But when they’re actually cooking, you want to keep them kinda whole. That’s so when you bite into it, all little scrambled pieces of egg don’t come pouring out . Another way is by adding just a little bit of shredded cheese to the eggs while they’re cooking. It helps bind them together
2. Don’t overload it either! Get a bigger tortilla if you want a monster wrap. Just don’t try to cram everything into one that’s too small. It’s not gonna hold well and will probably turn into one big sloppy mess. If that happens, then what’s really the point. You could have just made a platter & called it a day.
3. Toast it! That’s gotta be the best part. A lot of people overlook this step and just wrap and chow down. Toasting it makes sure to melt all those glorious fillings together. Not to mention you get a really nice crunchy outside. Totally worth it, if not mandatory, if you ask me
Other then that, do your own thing. Add what you like- do egg whites, choose a different meat or no meat all. Add extra cheese or vegetables- whatever you’re into. That’s all up to you. The only thing that you should really be focused on is how long I had to suffer in a hair net to be able to pass my breakfast skills down to you. You’re welcome 😁
