This is the best tortellini soup recipe inspired by the version my Mother used to make my siblings and I when we were kids.

The Best Tortellini Soup Recipe

From the recipe collection of Al Dente Diva

I hope you believe me when I tell you that I have the best tortellini soup recipe. I grew up on this stuff. My mother used to make it for me and my siblings all of the time. It was super easy to make for her and for us it was incredibly delicious and filling. Talk about a win win.

My mother used to make hers with simply cheese tortellini in chicken broth. Which is certainly a wonderful option. As I got older I added just a few ingredients to her basic recipe. In my opinion making the best tortellini soup recipe. Do me a favor though and don’t tell Mom I said that.

I added to my moms so feel free to add to mine also. Recipes are meant to be used as a guide so please feel free to make it your own. I’ll add some ideas for inspiration at some point below. For now, here’s the recipe for the best tortellini soup

Ingredients:

  • Frozen Tortellini (filling of your choice)
  • Chicken Broth
  • Crushed Tomatoes
  • Heavy Cream
  • Salt, pepper, garlic powder & Italian seasoning.
  • Parmesan Cheese (optional)

Instructions:

1. First add the crushed tomatoes to a large stock pot and warm over medium high heat. Stirring occasionally.

2. Next add the chicken broth and stir to combine. Continue to cook the crushed tomatoes and chicken broth over medium low heat for about 5 minutes.

3. Now add the cream and season with salt, pepper, garlic powder and Italian seasoning. Stir and bring to a soft boil.

4. Then add in the frozen tortellini. Continue cooking until the pasta is plump and cooked and the soup has thickened up a bit.

5. Lastly add the tortellini soup to a serving bowl and serve with parmesan cheese.

Just An FYI…

There are a couple things to consider when making this tortellini soup.

  • Use any kind of tortellini you want
  • You can use fresh not frozen if you prefer they will just cook faster.
  • If you like a thinner broth add more chicken stock.
  • You can use any kind of stock you’d like- chicken, vegetable or beef.
  • Start with sautéed garlic and onion for even more flavor.
  • Add any vegetables you’d like. Spinach and peas work very well here.
  • Add group beef or sausage for an even more hearty soup.

Thank you for the recipe! Definitely enjoyed it. I made this today during my 5th day of quarantine. I had all the needed ingredients in the pantry. I added spinach & 3 types of cheeses I had in the fridge. Will try next time with sautéed garlic & onions. Thanks again!

Can you use leftover homemade tomato sauce instead of the last 4 ingredients?

If your using bagged (on the grocery shelves) tortellini… Should you cook it first?
