It’s almost impossible not to love this Taco Bell enchilrito.

This is the easiest recipe that’s a huge hit every time I make it.
I used to love getting enchirito from Taco Bell. It used to me one of my favorite things on their menu.

Once they made the crazy decision to discontinue it in 2013 I was not happy.
One night the craving for one hit me so hard that I had to try to make one for myself.
It seemed pretty straight forward to me.

Taco seasoned ground beef, refried beans, shredded cheese and a flour tortilla covered in enchilada sauce.
I can do that!

My homemade version wound up being such a huge hit that it turned into an instant family favorite.
Total recreation success!

I love making these because not only does my family love them but they’re so easy to make, too.
They can be thrown together with just a few simple ingredients. Plus to be honest, I just love eating anything that I can put sour cream on.

Do I Have To Use Ground Beef?
No, you don’t have to use ground beef.
If you’d like to swap that out for ground turkey or chicken you’re perfectly welcome to.

It may taste even a little different than the original enchirito but it will still be delicious.
What Cheese Can I Use?
I recommend using shredded cheddar cheese for this one but of course, it’s up to you.

The choice is always yours. So if you’d prefer something else. Please use that.
A blend would always be a great option, too.

Just whatever you choose, make sure to shred the cheese yourself and avoid the pre shredded stuff that comes in a bag.
Do I Have To Shred The Cheese Myself?
This is the one shortcut I’d avoid at all costs.
Please be sure not to cut this corner and shred your own cheese. Trust me on this one.

The pre shredded cheese that comes in a bag is convenient for sure.
But they come with all kinds of chemicals in there like cellulose that keep it from clumping.
That anti clumping stuff is also going to stop the cheese from melting properly.

If you can just take this extra step and shred the cheese yourself, you’re going to be left with a much better melted cheese experience.
What Can I Serve These With?
I honestly feel like this dinner could be served alone.
It’s a whole meal in itself.

But if you’re looking for some options, simple chips and salsa would do the trick.
You could even do some Lipton Onion Roasted Potatoes or Mexican Street Corn Casserole.
What Toppings Should I Add?
Toppings are the best part! You really can add whatever you’d like.

Here are some great options:
- Sour cream
- Guacamole
- Salsa
- Sliced black olives
- Diced jalapeños
- Diced tomatoes
- Diced red onion

Ingredients

- Taco seasoning
- Ground beef
- Cheddar cheese, shredded
- Refried beans
- Four tortillas
- Enchilada sauce (red)
Instructions:
First, place the ground beef in a large skillet over medium high heat and cook it according to the directions of the taco seasoning packet.

Now, place some refried beans down in the center of each tortilla.

Next, layer some of the taco seasoned ground beef.

Then add some of the shredded cheese.

After that, roll the tortilla up with all the filling into the center.

Place it into a baking sheet.

Now pour the enchilada sauce over the tortillas.

Then sprinkle some remaining cheese on top of the enchilada sauce.

Bake them uncovered in a 375° oven for about 20 minutes or until the top layer of cheese is nice and bubbly.

Let them cool slightly before plating.

Serve them with sour cream, guacamole or whatever other toppings you’d like.

Ingredients
- 1 lb ground beef
- 1 oz taco seasoning packet
- 1.5 cheddar cheese, shredded
- 1 16 oz refried beans
- 1 cup enchilada sauce
- 5-6 flour tortillas
- cooking spray
Instructions
- First, make the ground beef according to the directions on the back of a taco seasoning packet. Keep it warm once its done.
- Now take each tortilla and add about 2-3 tbs of refried beans in the center of each one. With the back of a spoon, spread in all across the middle
- Now distribute the taco meat evenly between each enchirito covering the refried beans.
- Top with the shredded cheese. Also distribute that evenly but make sure to set half a cup aside for later.
- Then roll the enchirito up and place them seam side down in a baking dish thats been sprayed with cooking spray
- Now cover with enchilada sauce and the remaining cheese.
- Bake it in a 375 degree oven for about 20 minute or until the enchilada sauce is bubbly.
- Serve with shredded lettuce, sour cream or whatever else youd like and enjoy!
