Take one sheet of puff pastry and cut it vertically down the middle. Spread a thin layer of pesto onto each half and sprinkle with parmesan cheese.
Tightly jelly roll it up, horizontally and wrap it in plastic wrap. Place it in the fridge for at least one hour.
Once it’s ready to be baked, preheat the oven to 425 degrees and slice the dough into 1” rounds.
Place them down onto a parchment paper lined baking sheet. Place them into the center rack of the oven for about 9 minutes or until they’re golden brown. Finally, let them cool slightly and enjoy.
