Preheat the oven to 350°
In a large bowl, add the ground beef, chopped onion, garlic, soy sauce, sesame oil, hoisin sauce, bread crumbs, eggs and ginger paste.
Season it with salt, pepper and garlic powder and mix everything together until it’s evenly combined. Don’t over mix the meat or the meatballs will become too dense. Also, keep in mind when adding salt that the soy sauce is salty.
Form the mixture into equally sized meatballs and add them to a parchment paper lined baking sheet. Place them into the center rack of the oven for 35 minutes.
While the meatballs are cooking, make the sauce by adding the soy sauce, hoisin sauce, sesame oil, sriracha, brown sugar and minced garlic into a large skillet.
Turn the heat to medium low, stir everything together and let the sauce simmer for about 2-3 minutes. NOTE- if you'd like the sauce to be a little thicker, add a corn starch slurry to it by mixing 1 tbs of corn starch with 1 tbs of water and mixing it into the sauce.
Add the meatballs into the skillet and toss them into the sauce until they are evenly coated.
Finally, garnish with some sesame seeds and fresh parsley or chopped scallions (optional). Serve and enjoy!
