Bacon and Peas Pasta Salad

Bacon and peas pasta salad is made with tender small pasta, frozen peas, bacon bits, and freshly grated Parmesan that’s tossed in creamy mayonnaise-based dressing for a delicious side dish the whole family will love.

Ingredients
  

  • 1 Pound Small Shell Pasta, cooked to al dente
  • 2 Cups Frozen Peas
  • 2 Cups Bacon Bits or Cooked and Crumbled Bacon
  • ¾ Parmesan Cheese, freshly grated

For The Dressing

  • 1.5 Cup Mayonnaise
  • ¼ Cup Olive Oil
  • 2 Tbs Apple Cider Vinegar
  • 1 teaspoon Sugar
  • Salt and Pepper to taste
  • 1 Tbs Garlic Powder
  • 1 Tbs Onion Powder
  • 2 Tbs Dried Parsley

Instructions
 

  • Run the cooked pasta under cold water (to stop the cooking process), strain it, and add it to a large bowl.
  • Add the frozen peas (no need to thaw them), bacon and parmesan cheese.
  • In a separate bowl, mix together the mayonnaise, olive oil, apple cider vinegar, sugar, salt, pepper, garlic powder, onion powder and parsley. Pour the dressing into the bowl of pasta.
  • Mix everything together until it’s evenly combined and pour it into the pasta bowl.
  • Cover the bowl and place it into the fridge for 2 hours so the flavors can combine.
  • Toss everything together one last time, serve and enjoy! (If the pasta is a little too dry, feel free to add in a few more tablespoons of mayonnaise).
