Ingredients
  

  • 2 Tbs Olive Oil
  • 1 Pound Ground Pork
  • 1 Medium Yellow Onion, diced into 1" pieces
  • 1 Medium Red Bell Pepper, diced into 1" pieces
  • 1 Large Zucchini, cut into 1" rounds & cut in half
  • 3 Tbs Parsley or Green Onion, for garnish (optional)
  • 1 teaspoon Sesame Seeds, for garnish (optional)
  • Salt & Pepper to taste

For The Sauce

  • ½ Cup Orange Juice
  • ¼ Cup Low Sodium Soy Sauce
  • 1 Tbs Sesame Oil
  • 1 Tbs Ginger Paste
  • 2 Tbs Brown Sugar
  • 2 Cloves Garlic, minced
  • 1 Tbs Sriracha
  • ½ teaspoon Red Pepper Flakes
  • 1 Tbs Cornstarch

Instructions
 

  • In a medium bowl, whisk together the orange juice, soy sauce, sesame oil, brown sugar, garlic, ginger, crushed red pepper flakes, sriracha, and cornstarch until smooth. Set aside.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground pork and cook until browned, breaking it apart as it cooks. Transfer the cooked pork to a plate and carefully drain any excess grease if needed.
  • Add the remaining tablespoon of olive oil to the skillet. Add the onion, bell pepper, and zucchini. Cook for 5–7 minutes, stirring occasionally, until the vegetables are tender but still have a slight crunch. Lightly season with salt and pepper.
  • Return the cooked pork to the skillet. Pour the prepared sauce over the pork and vegetables. Stir continuously for 2–3 minutes until the sauce thickens and evenly coats everything.
  • Garnish with sliced green onions and sesame seeds if desired. Serve immediately over steamed jasmine rice, white rice, brown rice, or your favorite noodles.
