Breakfast Burritos With Sausage Gravy

Breakfast burritos with sausage gravy are made by rolling bacon, eggs and cheese in a flour tortilla and baking them with a flavorful sausage gravy on top.

Ingredients
  

  • 6-7 Small Flour Tortillas
  • 2 Tbs Butter
  • 8 Large Eggs
  • 1 1.4 Cup Cheddar Cheese, hand shredded
  • 1 Pound Breakfast Sausage
  • 4 Tbs Flour
  • 2.5 Cups Milk
  • Salt and Pepper to taste
  • 1 teaspoon Garlic Powder

Instructions
 

  • Preheat the oven to 350°
  • In a medium size skillet, melt the butter over medium high heat and add the beaten eggs. Season the eggs with a little salt and pepper and scramble them adding ¼ of a cup of cheese towards the end. The cheese will help bind the eggs together in the burrito.
  • Heat the tortillas for 10 seconds in the microwave (this will make them easier to roll). Divide the shredded cheddar cheese, eggs, and bacon into the center of each tortilla.
  • Roll the tortillas and place the burritos seam side down in a 9 x 13“ baking dish that has been sprayed with a little cooking spray.
  • In a large skillet, brown, the sausage over medium high heat until it is cooked completely through. Stir in the flour and let the sausage and flour cook together for two minutes stirring frequently.
  • Slowly pour in the milk and continues stirring. Season the gravy with salt, pepper, and garlic powder. Continue stirring over medium heat until the gravy becomes thick. This should take about 3-5 minutes.
  • Pour the sausage gravy evenly on top of the burritos. Place the burritos in the center rack of the oven for 20 minutes.
  • Finally, let the burritos cool, slightly garnish with parsley (optional), serve warm, and enjoy!
