Chicken Bacon Ranch Quesadillas

Chicken bacon ranch quesadillas are loaded with shredded rotisserie chicken, cheese, bacon bits and ranch for a delicious snack, lunch or dinner the whole family will love.

Ingredients
  

  • 1 Shredded Rotisserie Chicken
  • 1 Oz Ranch Seasoning Packet
  • 1 Cup Ranch Dressing
  • 1 Cup Cheddar Cheese, hand shredded
  • 1 Cup Monterey Jack Cheese, hand shredded
  • ½ Cup Cooked and Crumbled Bacon
  • Salt and Pepper to taste
  • Tortillas how many depends on the size you choose but typically this makes 6-8 small quesadillas so you'll need 12-16

Instructions
 

  • In a large bowl, add the shredded rotisserie chicken, crumbled bacon, dry ranch seasoning, ranch dressing, shredded cheddar cheese and shredded Monterey Jack cheese. Season it with salt and pepper and mix everything together until it’s combined.
  • Evenly distribute the filling onto half of the tortillas. Next, add the other half of the tortillas onto the top of each one. Add the other half of the tortillas onto the top of each one.
  • Working in batches, place the tortillas down onto a hot skillet that’s been sprayed with cooking spray or lightly oiled. Flip the tortillas after 2 minutes on each side or until they are golden brown and crispy.
  • Let them cool slightly, slice them into wedges, serve warm and enjoy!
