Chicken Parmesan Meatballs

Chicken parmesan meatballs are a delicious spin on the classic Italian dinner made with ground chicken meatballs baked in tomato sauce and covered in mozzarella and parmesan cheese.

Ingredients
  

  • 2 pounds Ground Chicken
  • 2 Eggs
  • 1 cup Italian Seasoned Breadcrumbs
  • ½ cup Milk
  • ½ cup Parmesan Cheese
  • 1 ¼ cup Mozzarella Cheese
  • 1.5-3 cups Tomato Sauce
  • Salt and Pepper to taste
  • 1 tbs Garlic Powder
  • 2 tbs Italian Seasoning
  • 1 tbs Onion Powder
  • 2 tbs Fresh Parsley, chopped (for garnish, optional)

Instructions
 

  • Preheat the oven to 350°
  • In a large bowl, add the ground chicken, eggs, Italian seasoned breadcrumbs, milk, ¼ cup of the Parmesan cheese and ½ cup of the mozzarella cheese.
  • Season it with salt, pepper, garlic powder and Italian seasoning and mix everything together until the ingredients are combined.
  • Roll the meat mixture into balls that are about 1.5 inches thick and place them onto a parchment paper lined baking sheet. Place them into the oven to cook for 30 minutes.
  • Line a 9 x 13” baking dish with half the tomato sauce and place the meatballs on top. Spoon the rest of the sauce over the meatballs.
  • Sprinkle the top with a little more Parmesan cheese and the rest of the mozzarella cheese.
  • Place it into the oven for about 25 minutes or until the cheese is melted and the sides are hot and bubbly.
  • Let it cool slightly, garnish with parsley and serve alone or over rice or pasta and enjoy.
