Ingredients
  

  • 1 Pound Spaghetti, cooked to al dente and rinsed under cold water
  • ½ Cup Creamy Peanut Butter
  • ¼ Cup Soy Sauce
  • 2 Tbs Sesame Oil
  • 4 Cloves Fresh Garlic, minced
  • 1 Tbs Sugar
  • 1 Cup Shredded Carrots
  • 4 Scallions, thinly sliced
  • Black Pepper to taste
  • 1 Garlic Powder

Instructions
 

  • In a large bowl, whisk together the peanut butter, soy sauce, sesame oil, olive oil, garlic, sugar, black pepper, and garlic powder until smooth.
  • Add the cooled spaghetti, shredded carrots, and scallions to the bowl.
  • Toss everything together until the noodles are evenly coated with the peanut sauce.
  • Cover and refrigerate for at least 30 minutes before serving to allow the flavors to develop. Garnish with additional scallions before serving, optional.
