1PoundSpaghetti, cooked to al dente and rinsed under cold water
½CupCreamy Peanut Butter
¼CupSoy Sauce
2TbsSesame Oil
4ClovesFresh Garlic, minced
1TbsSugar
1CupShredded Carrots
4Scallions, thinly sliced
Black Pepper to taste
1Garlic Powder
Instructions
In a large bowl, whisk together the peanut butter, soy sauce, sesame oil, olive oil, garlic, sugar, black pepper, and garlic powder until smooth.
Add the cooled spaghetti, shredded carrots, and scallions to the bowl.
Toss everything together until the noodles are evenly coated with the peanut sauce.
Cover and refrigerate for at least 30 minutes before serving to allow the flavors to develop. Garnish with additional scallions before serving, optional.
