Ingredients

  • 1 Tbs Oli Oil
  • ½ Onion, chopped
  • 4 Cloves Garlic, minced
  • 14 Oz Can Diced Tomatoes
  • ½ Cup Heavy Cream
  • Salt and Pepper, to taste
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Garlic Powder
  • 1 Pound Bow Tie Pasta (cooked) + a ladle of pasta water
  • 2 Cups Fresh Baby Spinach
  • ¼ Cup Parmesan Cheese

Instructions

  • In a large skillet, heat the olive oil over medium high heat and add the chopped onion. Sauté, stirring occasionally, until softened. Add the garlic and cook for another minute.
  • Stir in the diced tomatoes (with juices) and slowly pour in the heavy cream. Season the sauce with salt, pepper, Italian seasoning, and garlic powder.
  • Stir everything together well, then turn the heat to low. Let the sauce simmer for about 5 minutes to thicken slightly. Stir in the reserved pasta water and cooked bow ties to the sauce.
  • Add the spinach in batches, stirring until it wilts into the sauce. Finally, stir in the Parmesan cheese, serve warm and enjoy!
