Creamy Tuscan Tortellini

Creamy Tuscan Tortellini is a super delicious and easy to make dinner that’s made by tossing cooked cheese tortellini into a flavorful, creamy sauce with sun dried tomatoes and spinach.

Ingredients
  

  • 2 tbs Butter
  • 1 small Onion, chopped
  • 3 cloves Garlic, chopped
  • ¼-1/2 cup Sun Dried Tomatoes, chopped
  • ½ cup Vegetable Broth
  • 1 cup Heavy Cream
  • 1 cup packed Baby Spinach
  • ½ cup Parmesan Cheese
  • 1 pound Cheese Tortellini, cooked
  • Salt and Pepper to taste
  • 1 teaspoon Red Pepper Flakes
  • 1 tbs Garlic Powder
  • 2 tbs Italian Seasoning

Instructions
 

  • In a large skillet, melt the butter over medium high heat and add the chopped onion and garlic. Add salt, pepper, 1 tbs of the Italian seasoning and hot pepper flakes and sauté the onion until it is soft.
  • Add the chopped sun dried tomatoes and sauté them for 1 minute.
  • Slowly stir in the vegetable both and heavy cream. Season the sauce with salt, pepper, and the rest of the Italian seasoning and garlic powder and let the sauce cook for about two minutes.
  • Add the baby spinach and stir it into the sauce into the spinach has wilted.
  • Add the cooked tortellini and Parmesan cheese.
  • Toss everything together until the pasta is evenly coated in the sauce. Serve warm and enjoy!
