In a large bowl, add the ground beef, eggs, Lipton onion soup packets, diced onion, milk, ketchup and crushed Ritz crackers. Season it and mix everything together just until it’s evenly combined. Be careful not to over work the meat or the meatloaf will become too dense.
Line a crockpot with two layers of aluminum foil so that the meatloaf can be easily removed from the crockpot later and gently place the meatloaf on top of the foil.
In a small bowl, mix together the ingredients for the glaze and evenly spread the sauce over the top of the meatloaf.
Close the crockpot lid and place it on the low setting for 6 hours.
Now, carefully lift the aluminum foil, leaving the liquid that has accumulated at the bottom, and place it onto a cutting board.
Finally, slide the meatloaf off of the aluminum foil, garnish with freshly chopped parsley (optional), slice and enjoy!
