Crockpot swamp potatoes are baby potatoes slow cooked with smoky andouille sausage, green beans, onion soup mix, and butter for a rich Southern style side dish.
1.5PoundsBaby Yellow Potatoes, cleaned and cut into quarters
1SmallOnion, diced
2ClovesGarlic, miced
13.5OzAndouille Sausage- sliced into ¼" pieces
2(14.5) Oz CansFresh Cut Green Beans, drained
Salt and Pepper to taste
1teaspoonGarlic Powder
1teaspoonOnion Powder
1Oz PaketLipton Onion Soup Mix
Instructions
Spray the inside of the crockpot generously with nonstick spray. Add the quartered baby potatoes and season them with salt, pepper, garlic powder, and onion powder. Stir until the potatoes are evenly coated in the seasoning. Add the diced onion, fresh garlic and sausage on top. Add the drained green beans and spreading them evenly.
Sprinkle the onion soup mix over everything and place the stick of butter on top. Cover and cook on HIGH for 5 hours, until the potatoes are very tender. Gently stir before serving to coat everything in the buttery sauce and enjoy!
