Crockpot White Chicken Chili

Crockpot white chicken chili is a delicious cool weather meal made with hearty ingredients like chicken, beans corn and shredded cheese.

Ingredients
  

  • 1 pound Chicken Breast
  • 1 small Onion (white or yellow), diced
  • 4 cloves Garlic, minced
  • 2 cups Chicken Broth
  • 2 10.5 oz cans Cream of Chicken Soup
  • 15 oz can White Beans, drained and rinsed
  • 4 oz can Diced Green Chilis
  • 15 oz can Whole Kennel Corn
  • 8 ounces Cream Cheese, softened
  • ½ cup Heavy Cream
  • 1 cup White Cheddar Cheese, hand shredded
  • Salt and Pepper to taste
  • 1 teaspoon Cayenne Pepper
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder

Instructions
 

  • Add the chicken, onion, fresh garlic, chicken broth, cream of chicken soups, chicken broth, beans, green chilies into the crock pot.
  • Season it with salt, pepper, garlic powder, chili powder, cayenne pepper and cumin and stir everything together.
  • Then, place the top on and set it on low for 8 hours.
  • When seven and a half hours are left, remove the chicken breast, shred it and add it back to the crockpot along with the cubed cream cheese, heavy cream and shredded cheese.
  • Now, stir it in and let it continue to cook for the last 30 minutes.
  • Finally, stir everything together until it’s evenly combined and serve warm. Taste and re season if needed. Enjoy!
