Preheat the oven to 350°
In a large skillet over medium high heat, add the ground beef and chopped onion. Cook the ground beef and break it into small pieces as it browns. Drain the fat once it’s cooked all the way through.
Add the taco seasoning to the ground beef according to the directions on the back of the package.
Stir in the diced green chilies and about ¼ cup of the enchilada sauce and let it simmer for 5 miutes
Add ½ cup of enchilada sauce to the bottom of a 9 x 13” baking dish.
Add two (or more depending on the size of the tortillas you use) tortillas to the bottom of the dish until the surface is covered completely. Don’t forget, you can rip them in half if you need to, too.
Add half of the ground beef mixture and smooth it out so that it’s flat and even.
Sprinkle half of the beans evenly on top of the ground beef.
Then, add half a cup of the shredded cheddar and half a cup of the Monterey jack cheese.
Drizzle the top with ¼ cup of enchilada sauce.
Repeat those layers and end with a 3rd layer of tortillas.
Add the rest of the shredded cheeses and drizzle the top with ¼ cup of enchilada sauce.
Cover the casserole with tin foil and pop it into the oven for about 30 minutes or until the cheese is melted.
Let it cool slightly, add shredded lettuce, diced tomatoes and diced onion (optional) slice to serve and enjoy!
