Greek Tortellini Salad

Greek Tortellini salad is the perfect summer side made with cheese tortellini, tomatoes, cucumbers, olives, red onion, crumbled feta cheese, and a homemade Greek dressing.

Ingredients
  

  • 9 Oz Cheese Tortellini, cooked in salted water and rinsed under cold water
  • 2 Tbs Olive Oil
  • ½ Cup Cherry Tomatoes, halved or quartered
  • ¼ Cup Red Onion, diced small
  • ½ Cup Bell Pepper, diced small
  • ½ Cup Kalamata Olives, pitted and rough chopped
  • ½ Cup Cucumbers, deseeded and diced small
  • 16 Oz Feta Cheese, crumbled off the block
  • Salt and Pepper to taste
  • 1 Tbs Oregano

Greek Salad Dressing

  • 4 Tbs Red Wine Vinegar
  • 1 Tbs Oregano
  • 3 Cloves Garlic, grated
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Fresh Lemon Juice
  • Salt and Pepper to taste
  • ½ Cup Olive Oil

Instructions
 

  • In a large bowl, add the cooked tortellini and olive oil. Toss the tortellini into the olive oil until it’s evenly combined.
  • Add the red onion, cherry, tomatoes, bell peppers, olives, and cucumber.
  • Season everything with salt, pepper, and oregano and add the feta cheese.
  • In a small bowl, whisk together the red wine vinegar, oregano, fresh garlic, Dijon, mustard, and a dash of lemon juice. Then slowly whisk in the olive oil.
  • Pour the dressing over the tortellini salad and toss everything together until it’s evenly combined.
  • Serve immediately or chill it in the fridge for a few hours first and enjoy!
