Greek Tortellini salad is the perfect summer side made with cheese tortellini, tomatoes, cucumbers, olives, red onion, crumbled feta cheese, and a homemade Greek dressing.
9OzCheese Tortellini, cooked in salted water and rinsed under cold water
2TbsOlive Oil
½CupCherry Tomatoes, halved or quartered
¼CupRed Onion, diced small
½CupBell Pepper, diced small
½CupKalamata Olives, pitted and rough chopped
½CupCucumbers, deseeded and diced small
16OzFeta Cheese, crumbled off the block
Salt and Pepper to taste
1TbsOregano
Greek Salad Dressing
4TbsRed Wine Vinegar
1TbsOregano
3ClovesGarlic, grated
1teaspoonDijon Mustard
1teaspoonFresh Lemon Juice
Salt and Pepper to taste
½CupOlive Oil
Instructions
In a large bowl, add the cooked tortellini and olive oil. Toss the tortellini into the olive oil until it’s evenly combined.
Add the red onion, cherry, tomatoes, bell peppers, olives, and cucumber.
Season everything with salt, pepper, and oregano and add the feta cheese.
In a small bowl, whisk together the red wine vinegar, oregano, fresh garlic, Dijon, mustard, and a dash of lemon juice. Then slowly whisk in the olive oil.
Pour the dressing over the tortellini salad and toss everything together until it’s evenly combined.
Serve immediately or chill it in the fridge for a few hours first and enjoy!
