Greek Tortellini Salad
Greek Tortellini salad is the perfect summer side made with cheese tortellini, tomatoes, cucumbers, olives, red onion, crumbled feta cheese, and a homemade Greek dressing.

- 9 Oz Cheese Tortellini, cooked in salted water and rinsed under cold water
- 2 Tbs Olive Oil
- ½ Cup Cherry Tomatoes, halved or quartered
- ¼ Cup Red Onion, diced small
- ½ Cup Bell Pepper, diced small
- ½ Cup Kalamata Olives, pitted and rough chopped
- ½ Cup Cucumbers, deseeded and diced small
- 16 Oz Feta Cheese, crumbled off the block
- Salt and Pepper to taste
- 1 Tbs Oregano
Greek Salad Dressing
- 4 Tbs Red Wine Vinegar
- 1 Tbs Oregano
- 3 Cloves Garlic, grated
- 1 teaspoon Dijon Mustard
- 1 teaspoon Fresh Lemon Juice
- Salt and Pepper to taste
- ½ Cup Olive Oil
In a large bowl, add the cooked tortellini and olive oil. Toss the tortellini into the olive oil until it’s evenly combined.
Add the red onion, cherry, tomatoes, bell peppers, olives, and cucumber.
Season everything with salt, pepper, and oregano and add the feta cheese.
In a small bowl, whisk together the red wine vinegar, oregano, fresh garlic, Dijon, mustard, and a dash of lemon juice. Then slowly whisk in the olive oil.
Pour the dressing over the tortellini salad and toss everything together until it’s evenly combined.
Serve immediately or chill it in the fridge for a few hours first and enjoy!
