Preheat the oven to 400°
In a large skillet, heat the olive oil and 2 tbs of butter over medium high heat.
Add the carrots and season them with salt, pepper, garlic powder and thyme.
Toss the carrots in the oil, butter and seasonings and sauté them in the skillet, stirring frequently for about 5-7 minutes.
Add the fresh minced garlic and drizzle the carrots with honey. Sauté for one minute.
Transfer the carrots to a baking dish and top with the remaining 2 tbs of butter cut into pads.
Place the baking dish into the center rack of the oven for about 30 minutes or until the carrots are tender.
Finally, garnish with fresh parsley, serve warm and enjoy!
