Ingredients
  

  • 2 Tbs Olive Oil
  • ½ Onion, sliced
  • 4 Cloves Garlic, minced
  • Salt & Pepper to taste
  • ¼ teaspoon Red Pepper Flakes
  • 1 teaspoon Italian Seasoning (divided)
  • 28 Oz Crushed Tomatoes
  • 1 Cup Chicken Broth
  • ½ teaspoon Garlic Powder
  • 1.5 Pound Baby Potatoes, sliced in half
  • 1 Pound Fresh Green Beans

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and lightly season it with salt and pepper. Sauté for about 3–4 minutes or until the onion begins to soften.
  • Add the garlic, Italian seasoning and a few red pepper flakes. Sauté for another 1–2 minutes. Stir in the crushed tomatoes and chicken broth until everything is well combined.
  • Add the halved baby potatoes and trimmed green beans and gently stir them into the sauce. Bring the sauce to a gentle boil, then reduce the heat to a steady simmer. Cover the pot and simmer for about 30 minutes, stirring occasionally.
  • Remove the lid and continue simmering uncovered for another 15–25 minutes, or until the potatoes are fork-tender and the sauce has thickened. If the sauce begins reducing too much before the potatoes are tender, add additional chicken broth about ¼ cup at a time as needed. Serve & enjoy!
