Lemon and Dill Roasted Potatoes

These lemon and dill roasted potatoes are a nice change to classic roasted potatoes and are so easy to make.

Ingredients
  

  • 2 Lbs Potatoes, diced into small pieces
  • 3 Tbs Olive Oil
  • Salt and Pepper, to taste
  • 2 Tbs Garlic Powder
  • 3 Tbs Butter
  • ½ Large Lemon, juiced
  • 1 Large Lemon Zested
  • 3 Tbs Dill, Fresh

Instructions
 

  • Preheat the oven to 400 degrees and add the baking sheet into the oven so that preheats, too.
  • In the meantime, add the potatoes to a medium sized bowl and add the olive oil. Season them with salt, pepper and garlic powder. Toss to combine.
  • Carefully add the potatoes to the hot preheated baking sheet and put them back into the oven to cook for about 25 minutes or until the potatoes are nice and golden brown. I like to take a spatula and gently stir them around about half way through so they crisp up on all sides.
  • Melt the butter in a small bowl and add the lemon juice, zest and fresh dill. Mix everything together to combine.
  • Pour the dill butter right onto the top and toss them into the potatoes until they are all evenly coated.
  • Transfer them to serving bowl and serve warm. Enjoy!
