Loaded Mashed Potato Meatloaf is a hearty, comfort food classic made with a flavorful, homemade meatloaf mix topped with creamy mashed potatoes, cheddar cheese, crispy bacon and chives.

Instructions
Preheat the oven to 350°F.
In a large bowl, combine the ground beef, seasoned breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, pepper, and garlic powder. Mix everything together just until combined. Form the mixture into a loaf shape directly on a parchment paper lined baking sheet. Place it on the center rack of the oven for about 30–35 minutes.
While the meatloaf is baking, warm the prepared mashed potatoes and add them to a large bowl with the crumbled bacon, sour cream, chives, and ¾ cup shredded cheddar cheese until combined. Remove the meatloaf from the oven and carefully spread the mashed potato mixture evenly over the top. Sprinkle with the rest of the cheddar cheese.
Now, place it back into the oven for an another 15–20 minutes, or until the internal temperature of the meatloaf reaches 160°F. Let the meatloaf rest for 10 minutes before slicing. Garnish with extra crumbled bacon and fresh chives. Serve and enjoy!
