Ingredients
  

  • 2 Cups Ground Beef
  • 1 Egg
  • ½ Cup Milk
  • 1 Cup Italian Seasoned Breadcrumbs
  • ¼ Cup Ketchup
  • 1 Tbs Worcestershire Sauce
  • Salt and Pepper to taste
  • 1 teaspoon Garlic Powder
  • 2 Cups Prepared Mashed Potatoes
  • ¼ Cup Sour Cream
  • 1 Cup Cheddar Cheese, hand shredded
  • ½ Cup Bacon, cooked and crumbled (plus more for garnish)
  • ¼ Cup Chives (plus more for garnish)

Instructions
 

  • Preheat the oven to 350°F.
  • In a large bowl, combine the ground beef, seasoned breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, pepper, and garlic powder. Mix everything together just until combined. Form the mixture into a loaf shape directly on a parchment paper lined baking sheet. Place it on the center rack of the oven for about 30–35 minutes.
  • While the meatloaf is baking, warm the prepared mashed potatoes and add them to a large bowl with the crumbled bacon, sour cream, chives, and ¾ cup shredded cheddar cheese until combined. Remove the meatloaf from the oven and carefully spread the mashed potato mixture evenly over the top. Sprinkle with the rest of the cheddar cheese.
  • Now, place it back into the oven for an another 15–20 minutes, or until the internal temperature of the meatloaf reaches 160°F. Let the meatloaf rest for 10 minutes before slicing. Garnish with extra crumbled bacon and fresh chives. Serve and enjoy!
