Preheat the oven to 350°
In a small skillet, sauté the bell pepper and onion in a little olive oil. Lightly season them with salt and pepper and let them cool slightly when soft.
In a large bowl, add the ground beef, egg, seasoned breadcrumbs, milk, sautéed peppers and onions and the meatloaf mix.
Mix everything together until it’s evenly combined. Don’t over mix it, though. Stop once it’s combined to avoid meatballs that are too dense.
Take a small handful of the meatloaf mixture and roll them into 1-2” balls. Place them onto a parchment paper lined baking sheet and pop them into the oven for about 30 minutes or until they are cooked all the way through.
In the meantime, make the gravy according to the directions on the back of the package.
Then, once the meatballs are done cooking, place them on top of some mashed potatoes. Pour the gravy on top of the meatballs and mashed potatoes. Garnish with parsley (if desired) and enjoy!
