Meatloaf Meatballs with Gravy

Meatloaf meatballs in gravy are a delicious spin on traditional meatloaf that the whole family will love.

Ingredients
  

  • 1 pound Ground Beef
  • ½ Green Bell Pepper, diced small
  • 1 small Onion, diced small
  • 1 tbs Olive Oil
  • 1 Egg
  • 1 cup Italian Seasoned Breadcrumbs
  • ½ cup Milk
  • 1.2 oz Pioneer Meatloaf Mix or season with Salt, Pepper and 1 tbs of Garlic Powder)
  • ¼ cup Ketchup
  • 1.6 oz Pioneer Brown Gravy Packet
  • 2 cups Mashed Potatoes
  • Salt and Pepper to taste
  • Parsley for garnish, (optional)

Instructions
 

  • Preheat the oven to 350°
  • In a small skillet, sauté the bell pepper and onion in a little olive oil. Lightly season them with salt and pepper and let them cool slightly when soft.
  • In a large bowl, add the ground beef, egg, seasoned breadcrumbs, milk, sautéed peppers and onions and the meatloaf mix.
  • Mix everything together until it’s evenly combined. Don’t over mix it, though. Stop once it’s combined to avoid meatballs that are too dense.
  • Take a small handful of the meatloaf mixture and roll them into 1-2” balls. Place them onto a parchment paper lined baking sheet and pop them into the oven for about 30 minutes or until they are cooked all the way through.
  • In the meantime, make the gravy according to the directions on the back of the package.
  • Then, once the meatballs are done cooking, place them on top of some mashed potatoes.
  • Pour the gravy on top of the meatballs and mashed potatoes. Garnish with parsley (if desired) and enjoy!
