Mexican Macaroni Salad

Mexican macaroni salad is made with elbow macaroni, diced ham, chopped vegetables and just a few other simple ingredients tossed together in flavorful, creamy dressing.

Ingredients
  

  • 3 Cups Elbow Macaroni, boiled in salted water
  • 2 Cups Deli Ham, diced
  • ½ Cup Celery, chopped
  • 1 Large Carrot, shredded
  • 1 Cup Munster Cheese, diced into small cubes
  • ¼ Cup Red Onion, diced
  • 15 Oz Corn, drained
  • 2 Tbs Pickled Jalapeno

Dressing

  • ½ Cup Sour Cream
  • 1 Cup Mayonnaise
  • 2 Tbs Pickled Jalapeno Juice- from the jar
  • Salt and Pepper to taste

Instructions
 

  • In a large bowl, mix together the ingredients for the dressing.
  • Add the cooked elbow macaroni and stir the dressing into the macaroni until it’s evenly coated.
  • Add the diced ham, celery, shredded carrot, cubed Munster cheese, diced red onion, jalapeños and corn. Gently toss everything together until it’s evenly combined and coated in the dressing.
  • Either serve this immediately or place it into the fridge to let the flavors combine.
  • Finally, serve and enjoy!
