Mexican Macaroni Salad
Mexican macaroni salad is made with elbow macaroni, diced ham, chopped vegetables and just a few other simple ingredients tossed together in flavorful, creamy dressing.

- 3 Cups Elbow Macaroni, boiled in salted water
- 2 Cups Deli Ham, diced
- ½ Cup Celery, chopped
- 1 Large Carrot, shredded
- 1 Cup Munster Cheese, diced into small cubes
- ¼ Cup Red Onion, diced
- 15 Oz Corn, drained
- 2 Tbs Pickled Jalapeno
Dressing
- ½ Cup Sour Cream
- 1 Cup Mayonnaise
- 2 Tbs Pickled Jalapeno Juice- from the jar
- Salt and Pepper to taste
In a large bowl, mix together the ingredients for the dressing.
Add the cooked elbow macaroni and stir the dressing into the macaroni until it’s evenly coated.
Add the diced ham, celery, shredded carrot, cubed Munster cheese, diced red onion, jalapeños and corn. Gently toss everything together until it’s evenly combined and coated in the dressing.
Either serve this immediately or place it into the fridge to let the flavors combine.
