Mexican macaroni salad is made with elbow macaroni, diced ham, chopped vegetables and just a few other simple ingredients tossed together in flavorful, creamy dressing.
3CupsElbow Macaroni, cooked in salted water and rinsed under cold water
2CupsDeli Ham, diced
½CupCelery, chopped
1LargeCarrot, shredded
1CupMunster Cheese, diced into small cubes
¼CupRed Onion, diced
15OzCorn, drained
2TbsPickled Jalapeno
Dressing
½CupSour Cream
1CupMayonnaise
2TbsPickled Jalapeno Juice- from the jar
Salt and Pepper to taste
Instructions
First, in a large bowl, mix together the sour cream, mayonnaise, juice from the pickled Jalapeños, salt and pepper. Stir the macaroni until it’s evenly coated in the dressing. Add the diced ham, celery, shredded carrot, cubed Munster cheese, diced red onion, jalapeños and corn and gently toss everything together until it’s evenly combined and coated in the dressing.
Either serve this immediately or place it into the fridge to let the flavors combine and enjoy.
