Mexican Macaroni Salad Recipe

Mexican macaroni salad is made with elbow macaroni, diced ham, chopped vegetables and just a few other simple ingredients tossed together in flavorful, creamy dressing.

Ingredients
  

  • 3 Cups Elbow Macaroni, cooked in salted water and rinsed under cold water
  • 2 Cups Deli Ham, diced
  • ½ Cup Celery, chopped
  • 1 Large Carrot, shredded
  • 1 Cup Munster Cheese, diced into small cubes
  • ¼ Cup Red Onion, diced
  • 15 Oz Corn, drained
  • 2 Tbs Pickled Jalapeno

Dressing

  • ½ Cup Sour Cream
  • 1 Cup Mayonnaise
  • 2 Tbs Pickled Jalapeno Juice- from the jar
  • Salt and Pepper to taste

Instructions
 

  • First, in a large bowl, mix together the sour cream, mayonnaise, juice from the pickled Jalapeños, salt and pepper. Stir the macaroni until it’s evenly coated in the dressing. Add the diced ham, celery, shredded carrot, cubed Munster cheese, diced red onion, jalapeños and corn and gently toss everything together until it’s evenly combined and coated in the dressing.
  • Either serve this immediately or place it into the fridge to let the flavors combine and enjoy.
