Million Dollar Chicken Casserole

Million dollar chicken casserole is made with rotisserie chicken and sautéd vegetables baked in a creamy, cheesy sauce topped with bacon bits for an unforgettable dinner.

Ingredients
  

  • 1 Rotisserie Chicken, shredded
  • 4 ounces Cream Cheese, room temp
  • ½ cup Sour Cream
  • 10.5 oz Cream of Cheddar Soup
  • 1 Red Bell Pepper, chopped
  • 1 Onion, chopped
  • 1 tbs Olive oll
  • 1 cup Cheddar Cheese, hand shredded
  • Salt and Pepper to taste
  • 1 tbs Garlic Powder
  • 1 teaspoon Chicken Bullion
  • 2-3 strips Bacon, cooked and crumbled
  • 2 tbs Scallions, chopped for garnish (optional)

Instructions
 

  • Preheat the oven to 350 degrees
  • Over medium high heat, add the oil in a small skillet and sauté the bell pepper and onion in a little salt and pepper for about 5 minutes.
  • In a large bowl, add the shredded rotisserie chicken, softened cream cheese, sour cream, cream of cheddar soup, and sautéed peppers and onions.
  • Season it with chicken bullion, salt, pepper and garlic powder and mix everything together until it’s evenly combined. (You may not need to add salt if you're sensitive to it because some of the ingredients are already salty.)
  • Add the chicken mixture to an 9 x 13” baking dish and, using the back of a spoon, flatten it out so the top is level and even.
  • Sprinkle the shredded cheese and bacon bits on top and bake it in the oven for about 20-30 minutes or until the cheese is melted and the sides are hot and bubbly.
  • Finally, let it cool slightly, garnish with scallions and serve warm. Enjoy!
