Mini Loaded Baked Potatoes
Mini loaded baked potatoes are baby potatoes baked in olive oil and salt, then topped with cheddar cheese, sour cream, chives and bacon bits.

- 1-1.5 Pounds Baby potatoes
- 2 Tbs Olive oil
- Salt (to taste)
- ¼-1/2 Cup Cheddar cheese, hand shredded
- ¼ Cup Sour cream
- ¼ Cup Bacon bits
- 1 Tbs Chives
Preheat the oven to 400°
First, clean and dry the potatoes then place them onto a baking sheet. Drizzle them with olive oil and salt them.
Now rub the olive oil and salt evenly into the skin of the potatoes.
Next, place them into the oven until they are fork tender. This should take about 20-30 minutes depending on the size of the potatoes.
Then, let them cool slightly and cut a v shape into the center of the top and carefully remove it with some of the filling.
Now, add the shredded cheddar cheese first so it can melt a little into the warm potato.
Finally, add the bacon bits and chives. Enjoy!
