Mississippi Skillet Rice is an easy, flavorful one pan dinner made with seasoned ground beef, tender rice, ranch seasoning, au jus gravy, and tangy pepperoncini peppers all simmered together in beef broth.
Add the ground beef to a large, deep skillet over medium high heat. Break it into small pieces and cook until browned. Drain any excess grease if needed.
Add the butter to the skillet and stir until completely melted into the ground beef. Stir in the uncooked long grain white rice and let it toast in the skillet for about 2–3 minutes, stirring occasionally.
Add the au jus gravy packet, ranch seasoning packet, black pepper, garlic powder, and onion powder. Stir everything together until the beef and rice are evenly coated.
Pour in the beef broth, then add the sliced pepperoncini peppers and a little juice from the jar. Stir everything together. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a tight fitting lid.
Let everything simmer for about 25 minutes, or until the rice is tender and most of the liquid has been absorbed. If the rice needs more time, continue cooking, adding a splash of broth if necessary.
Remove the skillet from the heat and let it rest, covered, for about 5 minutes. Fluff the rice with a fork and serve warm. Enjoy!
