Newport Beef Casserole

Newport beef casserole is an old-school comfort food recipe made with seasoned ground beef and sautéed vegetables baked with pasta and lots of melted cheese.

Ingredients
  

  • 4 tbs Olive Oil
  • 2 large Carrots, diced
  • 1 large Onion, diced
  • 2 stalks Celery, chopped
  • 4 cloves Garlic, minced
  • 1 ½ pounds Ground Beef
  • 6 oz Tomato Paste
  • 28 oz Diced Tomatoes
  • ½ cup Red Wine
  • 10 oz Frozen Chopped Spinach, thawed and drained wll
  • 1 pound Mezzi Rigatoni (cooked to al dente)
  • 1 ½ cup Cheddar Cheese, shredded
  • Salt and Pepper to taste
  • 1 tbs Dried Oregano
  • 1 tbs Dried Basil
  • 1 tbs Garlic Powder

Instructions
 

  • In a large skillet, heat the oil and sauté the chopped carrot, celery, onion and garlic for about 5 minutes or until they soften up. Lightly season them with salt and pepper.
  • Add the ground beef and break it up into small pieces with the back of a wooden spoon or spatula as it browns.
  • Once the beef is cooked all the way through, add the crushed tomatoes, tomato paste and red wine.
  • Stir everything together until it’s nice and evenly combined and season it with salt, pepper, oregano, basil and garlic powder. Turn the heat down and let the sauce simmer for one and a half hours.
  • Stir in the spinach and pasta until its evenly combined into the meat sauce.
  • Add everything in the skillet into a casserole dish and sprinkle the top with the shredded cheddar cheese.
  • Place it in a preheated 350° oven for 30 minutes or until the cheese is melted and the sides are hot and bubbly.
  • Finally, serve warm and enjoy!
