Old Fashioned Meatloaf

This old fashioned meatloaf is just like grandma used to make using ground beef, sautéed vegetables, breadcrumbs and just a few other simple ingredients baked and finished with a ketchup and brown sugar glaze.

Ingredients
  

  • 2.5 lbs Ground Beef
  • 1 Green Bell Pepper, diced
  • 1 Onion, diced
  • 2 tbs Olive Oil
  • 1 cup Seasoned Breadcrumbs
  • ½ cup Milk
  • 2 Eggs
  • ¼ cup Ketchup
  • ¼ cup Fresh Parsley, chopped (reserve some for garnish)
  • tbs Worcestershire Sauce
  • Salt and Pepper to taste
  • 1 tbs Garlic Powder

Glaze

  • ½ cup Ketchup
  • ½ cup Brown Sugar
  • 1 tbs Worcestershire Sauce
  • Salt and Pepper to taste
  • 1 teaspoon Garlic Powder

Instructions
 

  • Preheat the oven to 350°
  • First, in a medium size skillet, heat the olive oil over medium high heat and sauté the onion and bell pepper in a little salt and pepper until the vegetables are soft. Let them cool slightly.
  • In a large bowl, add the ground beef, sautéed vegetables, breadcrumbs, milk, Worcestershire sauce, eggs, parsley and ketchup. Season it with salt, pepper and garlic powder and mix everything together just until it’s combined. Try not to over mix the meat or the meatloaf will become too dense.
  • Add the mixture the center of a parchment paper lined baking sheet and form it into a meatloaf shape. Place it into the oven for about 45 minutes.
  • In the meantime, in a medium sized bowl, mix together ketchup, brown sugar, Worcestershire sauce, salt pepper and 1garlic powder.
  • Carefully take the meatloaf out of the oven and spread the ketchup mixture evenly on top. Place the meatloaf back into the oven for an additional 15- 20 minutes.
  • Let it cool slightly, sprinkle with fresh parsley (optional), slice and enjoy.
