Pasta Fagioli Soup

Pasta fagioili soup is a hearty, Italian soup made with pasta, beans and sautéd vegetables in a delicious beef and tomato based sauce.

Ingredients
  

  • 3 Tbs Olive Oil
  • 2-3 Large Carrots, chopped small
  • 2-3 Stalks Celery, chopped small
  • 1 Large Onion, chopped small
  • 3 Cloves Garlic, minced
  • 1 Pound Ground Beef
  • 6 Oz Tomato Paste
  • 28 Oz Crushed Tomatoes
  • 6 Cups Beef Broth
  • 15.5 Oz Cannellini Beans, rinsed and drained
  • ½ Cup Parmesan Cheese
  • 5 Oz bag Fresh Baby Spinach
  • 2 Cups Daltini Pasta
  • 1 teaspoon Red Pepper Falkes
  • Salt and Pepper to taste
  • 2 Tbs Italian Seasoning
  • 1 Tbs Garlic Powder

Instructions
 

  • In a large saucepan, heat the olive oil over medium high heat and add the chopped carrots, celery, onion and garlic. Season the vegetables with the hot pepper flakes, salt, pepper and 1 tbs Italian seasoning and sauté them until they are soft.
  • Add in the ground beef and break it up into small pieces with a wooden spoon until it’s cooked all the way through. Drain the fat.
  • Stir the tomato paste into the beef and let that cook together for 2 minutes. Add in the beef broth, crushed tomatoes, beans and Parmesan cheese.
  • Season the sauce with salt, pepper, 1 tbs Italian seasoning and garlic powder and bring the pot to a boil then reduce the heat and allow the soup to simmer for 30 minutes.
  • Turn the heat up to medium high and stir in the spinach until it is wilted. Stir in the pasta and let it cook in the sauce until it is done. Finally, let the soup cool slightly, serve warm and enjoy.
