Pasta Primavera

Pasta primavera is a classic pasta dish made with a variety of colorful vegetables cooked in a flavorful creamy garlic sauce.

Ingredients
  

  • 1 pound Pasta
  • ¼ cup Olive Oil
  • ½ stick Butter
  • 1 large Zucchini, sliced into rounds and halved
  • 1 medium Red onion, sliced
  • ½ pound Asparagus, cut into 1 inch pieces
  • 1 large Orange bell pepper, sliced
  • 2 cups Broccoli florets, cut into small pieces
  • 1 large Yellow squash, sliced into rounds and halved
  • 1 cup Cherry Tomatoes
  • 4 cloves Fresh Garlic, chopped
  • 1 cup Chicken or vegetable
  • ½ cup Heavy Cream
  • Salt and Pepper to taste
  • 2 tbs Garlic Powder
  • 2 tbs Italian Seasoning

Instructions
 

  • First, in a large skillet, heat the oil and butter and add all the chopped vegetables and fresh garlic.
  • Then, season the vegetables with salt and pepper and sauté them over medium high heat, stirring frequently, until they are soft. This should take about 5-10 minutes.
  • Now, add the chicken broth and heavy cream. Season the sauce with salt, pepper, garlic powder and Italian seasoning. Let the sauce simmer for about 5 minutes.
  • Then add in the cooked pasta and toss everything together until it is evenly coated in the sauce. Reseason if needed.
  • Finally, transfer the pasta to a serving dish, garnish with fresh parsley and Parmesan cheese (optional). Serve warm and enjoy!
