Pesto Alfredo With Sun Dried Tomatoes

Pesto Alfredo with sun dried tomatoes is a creamy, flavor packed pasta dish that’s easy to make and always a crowd pleaser.

Ingredients
  

  • 1 stick Butter
  • 4 cloves Garlic, minced
  • 1 ¼ cup Heavy Cream
  • 4 oz Cream Cheese, softened
  • ½ cup Parmesan Cheese
  • ¼ cup Pesto
  • 2 tbs Sun Dried Tomatoes, chopped (and 1 tbs of oil from the jar)
  • Salt and Pepper to taste
  • 1 tbs Garlic Powder
  • 1 pound Farfalle (bow tie) Pasta (and a ladle of pasta water)

Instructions
 

  • In a large skillet, melt the butter over medium high heat and stir in the crushed garlic. Let that simmer for about 1-2 minutes.
  • Reduce the heat to medium low and slowly pour in the heavy cream and add the cream cheese. Stir it in until the cream cheese melts into the sauce.
  • Season the sauce with salt, pepper and garlic powder and stir in pesto. Then, add the Parmesan cheese and stir the sauce until the cheese is melted and well blended into the sauce.
  • Now, stir in the chopped sun dried tomatoes and the oil from the jar that they came in.
  • Stir in a ladle of pasta water and the cooked farfalle pasta.
  • Finally, once the pasta is evenly coated in the sauce, serve warm and enjoy!
