Ritz Cracker Chicken Casserole

Ritz cracker chicken casserole is made with creamy shredded chicken, mixed vegetables and cheddar cheese baked in between two layer of Ritz cracker crusts.

Ingredients
  

  • 4 Sleeves Ritz Crackers
  • 1.5 Sticks Butter, melted
  • 1 Rotisserie Chicken, shredded
  • 10 Oz Frozen Mixed Vegetables, thawed
  • 1 Cup Cheddar Cheese, shredded
  • ½ Cup Sour Cream
  • 22.6 Oz Cream Of Chicken Soup
  • Salt and Pepper to taste
  • 1 Tbs Garlic Powder

Instructions
 

  • Preheat the oven to 375°
  • In a large bowl, add the shredded rotisserie chicken, sour cream, cream of chicken soup, thawed mixed vegetables and shredded cheddar cheese. Season it with salt, pepper and garlic powder and mix everything together until it’s evenly combined.
  • In a separate bowl, mix the crushed Ritz crackers and melted butter together and add half the crackers to the bottom of a 9 x 13” baking dish.
  • Add the chicken mixture and evenly spread it on top of the crackers. Then, evenly distribute the rest of the crackers on top of the chicken mixture.
  • Cover the casserole and place it into the center rack of the oven for 15 minutes. Then, uncover the casserole and let it cook for another 15 minutes.
  • Finally, let it coolly for 10 minutes. Serve warm and enjoy!
