Ingredients
  

  • 15 Oz Bag Refrigerated Cheese Tortellini
  • 2 Tbs Olive Oil
  • 1 Large Yellow Onion, chopped
  • 4 Cloves Garlic, chopped
  • 1 Lb Ground Sweet Italian Sausage
  • 3 Cups Chicken Broth
  • 28 Oz Can Crushed Tomatoes
  • 2 Cups Fresh Spinach, rinsed and cleaned
  • ½ Cup Heavy Cream (room temperature)
  • ½ Cup Parmesan Cheese
  • Salt and Pepper to taste
  • 2 Tbs Italian Seasoning
  • 1 Tbs Garlic Powder

Instructions
 

  • In a large stock pot, heat the olive oil over medium high heat and add the chopped onion. Lightly season it with salt and pepper. Saute until the onion is soft.
  • Add the sausage and break it down into small pieces using a wooden spoon as it cooks. Once the sausage is browned completely, add the chopped garlic ands stir for one minute.
  • Add the chicken broth and crushed tomatoes. Season with salt, pepper, garlic powder and Italian seasoning and stir everything together.
  • Add the spinach in in bunches and stir it into the soup until the spinach is wilted.
  • Slowly pour in heavy cream and parmesan cheese. Stir everything together and let the soup cook over medium heat for about 5 minutes.
  • Carefully add in the cheese tortellini and let them cook for about 3 - 5 minutes or until they are plump and have floated to the surface. Re season if needed and enjoy!
