Sausage Tortellini Soup

This sausage tortellini soup is made with cheese tortellini, Italian sausage and just a few other simple ingredients simmered in a creamy tomato broth.

Ingredients
  

  • 15 oz bag Cheese Tortellini
  • 2 tbs Olive Oil
  • 1 large White or Yellow Onion, chopped
  • 4 cloves Garlic, chopped
  • 1 lb Ground Sweet Italian Sausage
  • 3 cups Vegetable or Chicken Broth
  • 28 oz can Crushed Tomatoes
  • 2 cups Fresh Spinach, rinsed and cleaned
  • ½ cup Heavy Cream
  • ½ cup Parmesan Cheese
  • Salt and Pepper to taste
  • 2 tbs Italian Seasoning
  • 1 tbs Garlic Powder

Instructions
 

  • First, in a large stock pot, sauté the onion in a little bit of olive oil and lightly season it with salt and pepper.
  • Then, add the sausage and break it into small pieces using a wooden spoon. Just before the sausage is browned completely, stir in the chopped garlic.
  • Now add the vegetable broth and crushed tomatoes. Season with salt, pepper, garlic powder and Italian seasoning and stir it all together.
  • Next add the spinach in in bunches. Stir it until the spinach is wilted.
  • After that, add the heavy cream and parmesan cheese. Stir everything together and let the soup cook over medium heat for about 5 minutes.
  • Finally, add in the cheese tortellini. Once the tortellini are plum and have floated to the surface the soup is done.
  • Taste, and re-season it if needed. Let it cool slightly and enjoy!
