Sausage Tortellini Soup
This sausage tortellini soup is made with cheese tortellini, Italian sausage and just a few other simple ingredients simmered in a creamy tomato broth.

White or Yellow Onion, chopped

Ground Sweet Italian Sausage

Vegetable or Chicken Broth

Crushed Tomatoes

Fresh Spinach, rinsed and cleaned

Heavy Cream

cup
Parmesan Cheese
Salt and Pepper to taste

Instructions
First, in a large stock pot, sauté the onion in a little bit of olive oil and lightly season it with salt and pepper.
Then, add the sausage and break it into small pieces using a wooden spoon. Just before the sausage is browned completely, stir in the chopped garlic.
Now add the vegetable broth and crushed tomatoes. Season with salt, pepper, garlic powder and Italian seasoning and stir it all together.
Next add the spinach in in bunches. Stir it until the spinach is wilted.
After that, add the heavy cream and parmesan cheese. Stir everything together and let the soup cook over medium heat for about 5 minutes.
Finally, add in the cheese tortellini. Once the tortellini are plum and have floated to the surface the soup is done.
Taste, and re-season it if needed. Let it cool slightly and enjoy!
