Ingredients

  • 12 ounce Smoked Sausage, cut into ¼th-½ inch rounds
  • 1 pound Shrimp, cleaned and deveined
  • 1 pound Baby Potatoes, cut in half
  • 3 Ears Corn on the Cob- cut into 3 pieces each
  • 1 stick Butter, melted
  • ¼ cup Fresh Parsley, chopped
  • 4 cloves Garlic, chopped
  • 1 large Lemon, Juiced
  • ¼ cup Old Bay Seasoning, divided
  • Salt and Pepper to taste
  • 2 tbs Garlic powder, divided
  • Olive oIl (divided)

Instructions

  • Preheat the oven to 425°
  • First, boil the potatoes in salted water for about 10 minutes. Add the corn into the pot with the potatoes and continue to boil for another 5 minutes.
  • Now, drain the corn and potatoes from the water and place them in a large bowl.
  • Next, add half of the melted butter, half of the Old Bay, and half of the salt, pepper and garlic powder and give everything a nice mix until the potatoes and corn are evenly coated. Spread them over a large parchment paper lined baking sheet.
  • Now, to the same bowl that the potatoes and corn were in, add the shrimp, sausage, parsley, fresh garlic and lemon juice.
  • Next, add the rest of the melted butter, oil, Old Bay, salt, pepper and garlic powder and mix everything together until it’s evenly coated and add it to the baking sheet with the corn and potatoes.
  • Now, gently mix everything together onto the baking sheet so that it’s in an even layer. Overlapping is fine and absolutely expected so it’s doesn’t have to be in a single layer.
  • Next, place the baking sheet into the oven for about 20-25 minutes or until the shrimp are cooked all the way through.
  • Finally, serve warm and enjoy!
