Stove Top Stuffing Meatloaf

This stove top stuffing meatloaf uses a box of stuffing instead of traditional breadcrumbs for a truly unique spin on a classic recipe.

Ingredients
  

  • 2 Pounds Ground Beef
  • 6 Oz Box Stove Top Stuffing (any flavor you want) I used savory herbs
  • 1 Cup Vegetable Broth
  • 2 eEggs
  • 12 Oz Can Brown Gravy
  • ¼ cup Ketchup
  • Fresh Parsley, chopped (optional)
  • Salt and Pepper to taste
  • 1 teaspoon Onion Powder

Instructions
 

  • Preheat the oven to 350 degrees.
  • Pour out the box of stove top stuffing into a large bowl and add the vegetable broth. Stir them together and let it sit for a few minutes until the stuffing softens.
  • Add the eggs and ground beef. Season it with salt, pepper and onion powder.
  • Next add about ¼ cup of the brown gravy and the ketchup.
  • Mix everything together until it's just evenly combined. Don't over mix the meat or the meatloaf will end up being too dense.
  • Place the meat mixture onto a parchment paper lined baking sheet and form it into a meatloaf shape.
  • Bake it for about 45 minutes or until the beef is cooked all the way through. Let it rest for 5 minutes.
  • Warm up the rest of the gravy and add it to the top of the meatloaf. Spread it out evenly.
  • Sprinkle the top with fresh chopped parsley, slice and serve warm. Enjoy!
