Preheat the oven to 350 degrees.
Pour out the box of stove top stuffing into a large bowl and add the vegetable broth. Stir them together and let it sit for a few minutes until the stuffing softens.
Add the eggs and ground beef. Season it with salt, pepper and onion powder.
Next add about ¼ cup of the brown gravy and the ketchup.
Mix everything together until it's just evenly combined. Don't over mix the meat or the meatloaf will end up being too dense.
Place the meat mixture onto a parchment paper lined baking sheet and form it into a meatloaf shape.
Bake it for about 45 minutes or until the beef is cooked all the way through. Let it rest for 5 minutes.
Warm up the rest of the gravy and add it to the top of the meatloaf. Spread it out evenly.
Sprinkle the top with fresh chopped parsley, slice and serve warm. Enjoy!
