Stuffed Cowboy Meatloaf

Cowboy Meatloaf is a delicious spin on the classic comfort food made with a mix of ground beef and pork that’s stuffed with cheddar cheese and baked with a BBQ sauce topping.

Ingredients
  

  • 2 Pounds Ground Beef
  • 1 Pound Ground Pork
  • 2 Tbs Olive Oil
  • 1 Small Green Bell Pepper, diced
  • 1 Small White or Yellow Onion, diced
  • 2 Large Eggs
  • 1 Cup Seasoned Breadcrumbs
  • ½ Cup Milk
  • 2 Tbs Worcestershire Sauce
  • 1 Cup Cheddar Cheese, hand shredded
  • 1 Cup Barbecue Sauce (divided)
  • Salt and Pepper, to taste
  • 1 Tbs Garlic Powder
  • Parsley for garnish, optional

Instructions
 

  • Preheat the oven to °350
  • In a large skillet, sauté the peppers and onions in the olive oil until soft and season them with salt and pepper. Let them cool slightly.
  • In a large bowl, add the ground beef, ground pork, eggs, breadcrumbs, milk, Worcestershire sauce and the sautéed peppers and onions. Season meatloaf mixture with salt, pepper and garlic powder and mix everything together until it’s evenly combined. Be sure not to over mix the meat.
  • Add half of the meatloaf mixture into a baking dish and form it into a flat meatloaf shape. Using your fingers, gently push down into the center to form a small dip/ hole. Do not push all the way to the bottom.
  • Add the shredded cheese to the center and form the remaining meatloaf mixture around it, sealing in the cheese.
  • Brush half of the BBQ sauce onto the top and place it into the center rack of the oven for 40 minutes.
  • Carefully remove the baking dish from the oven and brush the top of the meatloaf with the remaining BBQ sauce. Place the baking dish back into center rack of the oven for another 25 minutes.
  • Finally, let the meatloaf rest for 10 minutes, garnish with parsley, serve warm and enjoy!
