Stuffed Pepper Soup
This stuffed pepper soup is made with all the delicious flavors of traditional stuffed peppers served in a comforting soup that the whole family is sure to love.

- 2 tbs Olive Oil
- 1 large Onion, chopped
- 1 Green Bell Pepper, chopped
- 1 Red Bell Pepper, chopped
- 4 cloves Garlic, minced
- ½ pound Ground Beef
- ½ pound Ground Sweet or Hot Italian Sausage
- 6 oz Tomato Paste
- 15.5 oz can Diced Tomatoes (with the juice)
- 3 cups Beef Broth
- 1 cup Jasmine Minute Rice
- ½ cup Parmesan Cheese
- Salt and Pepper to taste
- 1 tbs Garlic Powder
- 1 tbs Italian Seasoning
First, heat the oil in a large pot and add the chopped onion and bell peppers. Lightly season them with salt and pepper and sauté them until they begin to get soft.
Add the ground beef, sausage and garlic. Break the meat into small pieces with a wooden spoon or spatula and cook it until the meat has browned and cooked all the way through. (drain the fat if necessary)
Stir in the tomato paste, and add the whole can of diced tomatoes (including the juice) and beef broth.
Raise the heat until the liquid begins to gently boil and season it with salt, pepper, Italian seasoning and garlic powder.
Add the rice and turn the heat low and give everything a nice big stir. Put the lid on and let the rice cook until its soft and ready to eat. This should take about 5 minutes
Finally, stir in the Parmesan cheese, serve warm and enjoy!
