Stuffed Pepper Soup

This stuffed pepper soup is made with all the delicious flavors of traditional stuffed peppers served in a comforting soup that the whole family is sure to love.

Ingredients
  

  • 2 tbs Olive Oil
  • 1 large Onion, chopped
  • 1 Green Bell Pepper, chopped
  • 1 Red Bell Pepper, chopped
  • 4 cloves Garlic, minced
  • ½ pound Ground Beef
  • ½ pound Ground Sweet or Hot Italian Sausage
  • 6 oz Tomato Paste
  • 15.5 oz can Diced Tomatoes (with the juice)
  • 3 cups Beef Broth
  • 1 cup Jasmine Minute Rice
  • ½ cup Parmesan Cheese
  • Salt and Pepper to taste
  • 1 tbs Garlic Powder
  • 1 tbs Italian Seasoning

Instructions
 

  • First, heat the oil in a large pot and add the chopped onion and bell peppers. Lightly season them with salt and pepper and sauté them until they begin to get soft.
  • Add the ground beef, sausage and garlic. Break the meat into small pieces with a wooden spoon or spatula and cook it until the meat has browned and cooked all the way through. (drain the fat if necessary)
  • Stir in the tomato paste, and add the whole can of diced tomatoes (including the juice) and beef broth.
  • Raise the heat until the liquid begins to gently boil and season it with salt, pepper, Italian seasoning and garlic powder.
  • Add the rice and turn the heat low and give everything a nice big stir. Put the lid on and let the rice cook until its soft and ready to eat. This should take about 5 minutes
  • Finally, stir in the Parmesan cheese, serve warm and enjoy!
