Sweet Potato Casserole with Marshmallows

This sweet potato casserole with marshmallows is a holiday classic made with sweet potatoes, butter, cinnamon and syrup topped with toasted marshmallows.

Ingredients
  

  • 5-6 Sweet Potatoes
  • cup Maple Syrup
  • 1 stick Butter, melted
  • 1 tbs Cinnamon
  • 10 oz Mini Marshmallows
  • Pinch of Salt

Instructions
 

  • Preheat the oven to 400°
  • Place the sweet potatoes on a parchment paper lined baking dish and place them into the oven for one hour to roast.
  • Let them cool slightly, remove the skin and add them to a large bowl. Then, add the syrup, melted butter, cinnamon and pinch of salt. Mash the sweet potatoes and ingredients together until it reaches a consistency you like.
  • Add the sweet potato mixture to a sprayed 9 x 13” baking dish and spread it out so that its flat and even.
  • Add the bag of mini marshmallows to the top and gently press them down into the sweet potatoes.
  • Place it into the oven, in the middle rack, for about 10-20 minutes. That’s a wide range of time but very oven is different and the marshmallows can go from toasted to burnt very quickly. Please keep an eye on them.
  • Finally, let them cool slightly and enjoy!
