This sweet potato casserole with marshmallows is a holiday classic made with sweet potatoes, butter, cinnamon and syrup topped with toasted marshmallows.
Place the sweet potatoes on a parchment paper lined baking dish and place them into the oven for one hour to roast.
Let them cool slightly, remove the skin and add them to a large bowl. Then, add the syrup, melted butter, cinnamon and pinch of salt. Mash the sweet potatoes and ingredients together until it reaches a consistency you like.
Add the sweet potato mixture to a sprayed 9 x 13” baking dish and spread it out so that its flat and even.
Add the bag of mini marshmallows to the top and gently press them down into the sweet potatoes.
Place it into the oven, in the middle rack, for about 10-20 minutes. That’s a wide range of time but very oven is different and the marshmallows can go from toasted to burnt very quickly. Please keep an eye on them.
