The Best Broccoli Cheddar Soup

The best broccoli soup is made with fresh broccoli florets and shredded cheddar cheese cooked in a flavorful, creamy broth.

Ingredients
  

  • ½ stick Butter
  • 1 small Onion, diced
  • 1 cup Carrots, shredded
  • 4 cloves Garlic, minced
  • ¼ cup Flour
  • 2 cups Vegetable Broth
  • 2 cups Heavy Cream
  • 3 cups Broccoli Florets, chopped into small and medium sized pieces
  • 3 cups Cheddar Cheese, shredded
  • Salt and Pepper to taste
  • 1 tbs Garlic Powder

Instructions
 

  • In a large pot, sauté the diced onion and shredded carrot in a little bit of olive oil.
  • Lightly season them with salt and pepper and once the vegetables are soft, add the minced garlic and sauté for another minute.
  • Add the flower and stir it into the vegetables for two minutes.
  • Slowly stir in the vegetable broth and let the soup thicken up over medium heat for about 3 minutes.
  • Stir in the chopped broccoli and put a lid on the pot. Let the broccoli cook for 15 minutes.
  • Slowly stir in the heavy cream.
  • Stir in the shredded cheese and season the soup with salt, pepper and garlic powder.
  • Finally, let the soup simmer for about 10 minutes. Serve warm and enjoy!
