The Best Broccoli Cheddar Soup
The best broccoli soup is made with fresh broccoli florets and shredded cheddar cheese cooked in a flavorful, creamy broth.

- ½ stick Butter
- 1 small Onion, diced
- 1 cup Carrots, shredded
- 4 cloves Garlic, minced
- ¼ cup Flour
- 2 cups Vegetable Broth
- 2 cups Heavy Cream
- 3 cups Broccoli Florets, chopped into small and medium sized pieces
- 3 cups Cheddar Cheese, shredded
- Salt and Pepper to taste
- 1 tbs Garlic Powder
In a large pot, sauté the diced onion and shredded carrot in a little bit of olive oil.
Lightly season them with salt and pepper and once the vegetables are soft, add the minced garlic and sauté for another minute.
Add the flower and stir it into the vegetables for two minutes.
Slowly stir in the vegetable broth and let the soup thicken up over medium heat for about 3 minutes.
Stir in the chopped broccoli and put a lid on the pot. Let the broccoli cook for 15 minutes.
Slowly stir in the heavy cream.
Stir in the shredded cheese and season the soup with salt, pepper and garlic powder.
Finally, let the soup simmer for about 10 minutes. Serve warm and enjoy!
