The Best Rotel Dip Recipe

This appetizer is made with seasoned ground beef, a blend of four different cheeses, Rotel tomatoes and a secret ingredient for the best Rotel dip, ever.

Ingredients
  

  • 1 Pound Ground Beef
  • 2 Oz Taco Seasoning
  • 6 Oz Velveeta, cubed
  • ½ Cup Cheddar Cheese, hand shredded
  • ½ Cup Monterey Jack Cheese, hand shredded
  • 8 Oz Cream Cheese, softened
  • 12 Oz Evaporated Milk
  • 10 Oz Original Rotel
  • Fresh Parsley, Sour Cream and Salsa, for toppings (optional)
  • Serve with Tortilla Chips

Instructions
 

  • In a large cast iron skillet or pan, brown the ground beef and make it according to the directions on the back of the taco seasoning packet. (We’re using two packets instead of one for extra flavor).
  • Stir in the cubed Velveeta cheese until it’s melted into the ground beef then stir in the evaporated milk and rotel.
  • Turn the heat to low and stir in the shredded cheddar, Monterey Jack and cream cheese until it melts.
  • Garnish with sour cream, salsa and fresh parsley. Serve warm and enjoy!
