Easy lasagna soup combines all the delicious flavors of classic Italian lasagna with the comfort of soup for a dinner the the whole family will love.

This easy lasagna soup is the perfect way to keep warm this fall and winter. It's the ultimate comfort food.

This recipe was making its rounds like crazy on social media a few years ago. As soon as I saw it, I knew I had to make it and Im so glad that I did.

Of course, I put my own little spin on it and made it my own to suit my families preferences. They all couldn't have loved it more.

What a delicious way to get all of the familiar flavors of lasagna in an easy to make soup. It's brilliant!

Comfort food and cold weather go hand in hand. As soon as the temperature starts to drop in New Jersey we're ready for our soups and chilis.

Im always looking to add new recipes to the collection and this one earned a permanent spot on the list immediately. Especially since it got approval from my two picky kids.

Lasagna is a family favorite of ours in my house but making it can be kind of a hassle. Between preparing all of the ingredients and the time consuming layering, It's a tedious process for sure.

This recipe takes all the fuss out of the equation and gets straight to the good stuff. It takes less than half the time that it normally takes me to make a traditional lasagna.

It's the perfect busy weekday dinner that the whole family is guaranteed to enjoy.

Easy Lasagna Soup Variations

I like this recipe for lasagna soup made just the way it is, but here are some ways to change it up if you'd like to.

  • Tomato Sauce- Use a good jarred sauce Raoes or Victorias or your own tomato sauce recipe. I have a great recipe for Simple Tomato Sauce if you'd like to use that, click HERE.
  • Pasta- In most recipes broken up lasagna sheets are used. It is lasagna soup after all. I used Campanelle because it looks similar to the wavy ends of traditional lasagna sheets and makes it easier to eat in my opinion. Fell free to use whatever you'd like. Any pasta would work fine.
  • Heavy Cream- Alfredo sauce can be substituted for heavy cream. I have an easy and delicious recipe for Alfredo Sauce HERE or you can use your own or a good jarred alfredo.
  • Ground Meat- Ground chicken or turkey can be used here instead of ground beef.

Easy Lasagna Soup Ingredients

  • Lasagna Sheets or Campanelli
  • Ground Beef
  • Olive Oil
  • Ground Italian Sausage
  • Tomato Sauce
  • Beef Broth
  • Diced Tomatoes not drained
  • Heavy Cream
  • Ricotta Cheese
  • Mozzarella Cheese, hand shredded
  • Parmesan cheese
  • Salt, Pepper, Garlic Powder, Italian Seasoning, Oregano, Fresh Basil, shredded (optional)

Instructions

First, in a large pot, brown the ground beef and sausage in a little oil and drain the fat.

Then season the meat with salt, pepper, garlic powder and Italian seasoning.

Next add the tomato sauce.

Now add the beef and chicken broth.

Then add the can of diced tomatoes (with the juice).

After that, break up the lasagna sheets and add them to the soup. Stir everything together and turn the heat to medium high.

Now add the heavy cream, parmesan cheese and season the sauce with salt, pepper, Italian seasoning and garlic powder.

Let the pasta cook in the sauce and in the meantime, make the ricotta mixture by combining the ricotta, mozzarella and oregano.

Then place a couple large dollops of the ricotta in the soup. Be sure to save some for toppings later once it’s served.

Finally stir everything together and once the Lasagna noodles are finished cooking it’s ready! Don’t forget to taste and reseason if you need to.

Serve this easy lasagna soup in a big bowl with some shredded basil (optional) and a scoop of the ricotta cheese mixture on top. Enjoy!

Ingredients
  

  • 6-8 Lasagna Sheets or 1 pound of Campanelle Pasta
  • 1 tbs Olive Oil
  • 1 pound Ground Beef
  • ½ pound Ground Italian Sausage
  • Salt and Pepper to taste
  • 1 tbs Garlic Powder
  • 1 tbs Italian Seasoning
  • 1 32 oz jarred Tomato Sauce or 4 cups Homemade Sauce
  • 4 cups Beef Broth
  • 14.5 oz Diced Tomatoes (with the juice)
  • ½ cup Heavy Cream
  • ½ cup Parmesan Cheese
  • 1 cup Ricotta Cheese
  • ½ cup Mozzarella Cheese, hand shredded
  • 1 tbs Oregano
  • Fresh Basil (shredded)

Instructions
 

  • In a large pot, heat the olive oil over medium high heat and brown the sausage and ground beef. Drain the fat and season it with salt, pepper, Italian seasoning and garlic powder.
  • Add the tomato sauce, beef broth and diced tomatoes. Stir it all together until it's evenly combined and bring it to a gentle boil.
  • Break up the lasagna sheet and add them to the soup (or add the pound of pasta if using that instead of the lasagna sheets.)
  • Add the heavy cream and parmesan cheese.
  • In a medium size bowl, combine the ricotta cheese, mozzarella cheese and oregano. Add two big scoop fulls to the soup but be sure to reserve some for later.
  • Once the lasagna noodles are done cooking (should take about 8-10 minutes) reseason the soup if needed and place it in a serving bowl.
  • Add a little scoop of the ricotta mixture and garnish with shredded basil (optional). Serve warm and enjoy!
