This delicious minestrone soup is an Italian classic made with vegetables, beans and pasta cooked in a flavorful broth.

Serve up a nice big bowl of Italian comfort food with this easy to make minestrone soup.

My mother used to make this all the time for my siblings and I when we were kids. It’s a true classic that most of us grew up eating.

This soup is loaded with tons of vegetables, beans, and pasta cooked in a flavorful broth.

It’s the perfect choice for a busy weekday dinner.

The best thing about this recipe is that you can pretty much add any kind of vegetable that you’d like. This is a great recipe to make if you have some produce that you’d like to clean out of the fridge.

Not to mention, it is super easy to put together, too. This dinner can be on the table and under 30 minutes and ready to eat.

Whenever the temperature drops here in Jersey, this is always one of the first soups of the season that I make.

We’re family of four so we usually have leftover soup for the next day since this recipe makes a lot. To be honest, I think it tastes even better the second time around.

My whole family loves this one, including my two picky little boys.

Which is kind of a shock because normally it’s almost impossible to get them to eat their vegetables.

Minestrone Soup Variations

I like this recipe for minestrone soup made just the way it is, but here are some ways to change it up if you’d like to.

  • Pasta- Use any kind of small tube like pasta that you’d like.
  • Broth- Vegetable or chicken broth can both be used here.
  • Vegetables- Add any additional vegetables that you want like mushrooms and peas.
  • Beans- some people like to add two cans of different beans to this recipe. I only used one here but feel free to add another can of the same or choose a different one if you’d like.

Minestrone Soup Ingredients

  • Ditalini Pasta
  • Butter
  • Olive Oil
  • Celery, chopped
  • Carrot, chopped
  • Onion, chopped
  • Garlic, minced
  • Zucchini, diced
  • Tomato Paste
  • Diced Tomatoes
  • Red Kidney Beans (rinsed and drained)
  • Vegetable Broth
  • Frozen Cut Green Beans
  • Salt, Pepper, Garlic Powder and Italian Seasoning

Instructions

First, in a large pot, heat the butter and olive oil over medium high heat and add the chopped carrot, celery and onion.

Now, season the vegetables with salt, pepper and Italian seasoning. Sauté the vegetables until they are soft.

Next, add the chopped zucchini and garlic and cook the vegetables for about 3 more minutes or until the zucchini softens.

Now, stir in the tomato paste.

Now, add the can of diced tomatoes.

Next, stir in the vegetable broth and season the soup with salt, pepper, garlic powder and Italian seasoning.

Then, stir in the green beans.

Now, stir in the kidney beans and pasta.

Next, turn the heat to low and let the pasta cook in the soup. This should take about 10-15 min.

Finally, pour the soup into individual bowls, top with Parmesan cheese (optional) serve warm and enjoy!

Ingredients
  

  • ½ cup Ditalini Pasta
  • 2 tbs Butter
  • 2 tbs Olive Oil
  • 2 stalks Celery, chopped
  • 2 Carrot, chopped
  • 1 small Onion, chopped
  • 4 cloves Garlic, minced
  • 1 Zucchini, diced
  • 6 oz Tomato Paste
  • 14.5 oz Diced Tomatoes
  • 4 cups Vegetable Broth
  • 15 oz Red Kidney Beans (rinsed and drained)
  • ½ cup Frozen Cut Green Beans
  • Salt and Pepper to taste
  • 1 tbs Garlic Powder
  • 2 tbs Italian Seasoning (divided)
  • Parmesan Cheese (optional)

Instructions

  • Season the vegetables with salt, pepper and 1 tbs of Italian seasoning. Sauté the vegetables until they are soft. This should take about 5 minutes
  • Add the chopped zucchini and garlic and cook the vegetables for about 3 more minutes or until the zucchini softens.
  • Stir in the tomato paste and add the can of diced tomatoes.
  • Stir in the vegetable broth and season the soup with salt, pepper, garlic powder and the rest of the Italian seasoning.
  • Stir in the green beans, kidney beans and pasta.
  • Turn the heat to low and let the pasta cook in the soup. This should take about 10-15 min.
  • Finally, pour the soup into individual bowls, top with Parmesan cheese (optional) serve warm and enjoy!
