This pumpkin honey bun cake is one of my personal favorite fall desserts.

As soon as the weather starts to cool off in Jersey, it’s time to dive into the pumpkin flavored everything.
I particularly love this recipe because it can be served for breakfast, dessert or as a snack.
Anything sweet that I can have with my coffee always hits the spot.

This dessert is perfect to bring to any fall get together or party because it’s super easy to put together and absolutely delicious.
Simple but impressive desserts like this are my favorite. Especially since I’m admittedly not an awesome baker.

Whatever dessert I choose to make needs to be easy and taste amazing and this one is right up my alley.
It’s got the perfect amounts of pumpkin flavor, sweet walnuts and glaze. It’s like a giant pumpkin honey bun!
I’ve made this for everything from Halloween parties and Thanksgiving to casual after dinner desserts at home.

It’s always such a huge hit and everyone loves it. Even my two little boys who aren’t huge fans of pumpkin really enjoy this one.

Pumpkin Honey Bun Cake Variations
I like this cake recipe made exactly the way it is, but here are some ways to change it up if you’d like to.

- Cake Mix- Swap the yellow cake mix out for white or spice cake mix.
- Serving- This cake can be served, warm, room temperature and cold.
- Glaze- Thin of thicken the glaze by adding or subtracting milk. The more milk, the thinner it will get.
- Frosting- Instead of a glaze, add a cream cheese or cinnamon frosting to the top. Plain vanilla would work, too.

- Boxed Yellow Cake Mix
- Vegetable Oil
- Eggs
- Sour Cream
- Canned Pumpkin NOT PUMPKIN PUREE
- Pumpkin Pie Spice
- Brown Sugar
- Chopped Walnuts
- Powdered Sugar
- Milk
- Vanilla
Instructions
Preheat the oven to 350°
First, in a large bowl, add the cake mix, vegetable oil, eggs, sour cream, canned pumpkin, and pumpkin pie spice.

Now, using a hand mixer, blend everything together until it’s evenly combined.

Then, in a small sized bowl, stir together the brown sugar and chopped walnuts.

Next, pour half of the pumpkin cake mixture into a sprayed 9 x 13” pan.

Now, evenly sprinkle the walnut and brown sugar mixture onto the top.

Then, add the rest of the pumpkin cake batter to the top and spread it out evenly.

Next, bake the cake for about 35-40 minutes or until it’s cooked all the way through.

Once the cake is done, whisk together the powdered sugar, milk and vanilla to prepare the glaze and pour the glaze evenly over the cake and place it into to fridge to cool completely.

Finally, cut it into squares, serve and enjoy!
