This Baked Shrimp Scampi is made with tender shrimp baked in a buttery garlic, white wine and lemon sauce, then finished with crispy panko breadcrumbs on top.
Pat the shrimp dry and season them with salt, pepper, garlic powder and paprika.
Melt the butter and stir in the minced garlic, white wine, lemon juice, lemon zest, fresh parsley and red pepper flakes. Pour a little of the butter mixture into the bottom of a 9 x 13-inch baking dish and spread it around.
Arrange the seasoned shrimp in the baking dish in an even layer. Pour the remaining garlic butter evenly over the shrimp.
Melt some additional butter and stir it together with the panko breadcrumbs until they’re evenly coated. Sprinkle the buttery panko mixture over the shrimp.
Bake for about 10 minutes, or until the shrimp are pink, opaque and cooked through. Switch the oven to broil and broil briefly until the breadcrumbs are golden brown and crispy. Keep a close eye on them because they can brown very quickly. Garnish with additional fresh parsley and lemon, if desired, and serve warm.
