Shrimp scampi is one of those recipes that feels a little fancy but is actually incredibly easy to make. This baked version makes it even simpler because everything comes together right in one baking dish.
The buttery garlic sauce has just the right amount of lemon, white wine and red pepper flakes to give it tons of flavor without overpowering the shrimp. A crispy panko topping is the perfect finishing touch and makes this such a great easy dinner for entertaining or a weeknight meal.

How to Make It

Melt the butter and stir in the minced garlic, white wine, lemon juice, lemon zest, fresh parsley and red pepper flakes. Pour a little of the butter mixture into the bottom of a 9 x 13-inch baking dish and spread it around.

- Arrange the seasoned shrimp in the baking dish in an even layer. Pour the remaining garlic butter evenly over the shrimp. Melt some additional butter and stir it together with the panko breadcrumbs until they’re evenly coated. Sprinkle the buttery panko mixture over the shrimp.

- Bake for about 10 minutes, or until the shrimp are pink, opaque and cooked through. Switch the oven to broil and broil briefly until the breadcrumbs are golden brown and crispy. Keep a close eye on them because they can brown very quickly. Garnish with additional fresh parsley and lemon, if desired, and serve warm.

Pro Tips
- Pat the shrimp dry first. Removing excess moisture helps the seasonings stick and keeps the sauce from becoming watery.
- Use similarly sized shrimp. They’ll cook more evenly and be ready at the same time.
- Don’t overcook the shrimp. Shrimp cook incredibly quickly and can become rubbery when left in the oven too long.
- Watch closely while broiling. Panko can go from perfectly golden to burnt very quickly under the broiler.
- Use fresh lemon juice. Since there are so few ingredients in shrimp scampi, fresh lemon really makes a difference.
- Serve it right away. Shrimp scampi is at its best hot from the oven while the shrimp are tender and the topping is crispy.
Variations
- For an extra cheesy version, sprinkle a little freshly grated Parmesan cheese into the panko topping before baking.
- If you prefer a little more heat, increase the red pepper flakes. You can also leave them out completely if you’re serving anyone who doesn’t like spice.
- For an alcohol-free version, replace the white wine with chicken or seafood broth and add a little extra fresh lemon juice for acidity.
- You can also add a little Italian seasoning to the shrimp if you’d like to bring another layer of flavor to the dish.
What to Serve With Baked Shrimp Scampi
This shrimp scampi is fantastic served over pasta because the noodles soak up all of that buttery garlic and lemon sauce. Linguine, spaghetti or angel hair would all work beautifully.
For something lighter, serve it with roasted vegetables, asparagus or a simple green salad. Don’t forget some crusty Italian bread or garlic bread for soaking up every last bit of the scampi butter from the bottom of the baking dish.
Storage & Reheating
Store leftover baked shrimp scampi in an airtight container in the refrigerator for up to 2–3 days.
Because shrimp can easily become tough when reheated, warm leftovers gently. Reheat them in a skillet over low heat with some of the leftover butter sauce just until warmed through.
The crispy panko topping will soften somewhat once refrigerated, so this recipe is definitely best served fresh.
