This easy Blueberry Cinnamon Roll Casserole combines soft cinnamon rolls, juicy blueberries, and a rich vanilla custard into a sweet breakfast bake that's perfect for holidays, brunches, or lazy weekend mornings
Open both cans of cinnamon rolls and set the icing aside for later. Cut each cinnamon roll into quarters and spread the pieces evenly into a greased 9 x 13" baking dish.
Sprinkle the blueberries evenly over the cinnamon roll pieces.
In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and salt until smooth. Slowly pour the custard mixture evenly over the cinnamon rolls and blueberries, making sure everything is coated. Let the casserole sit for about 5 minutes so the cinnamon rolls can absorb some of the custard.
Place it into the center rack of the oven for 35-45 minutes, or until the center is fully set and the cinnamon rolls are cooked through. If the top begins browning too quickly, loosely tent it with foil during the last 10 minutes.
Allow the casserole to cool for 5-10 minutes before drizzling the reserved icing over the top.
