This Cheesy Crockpot Chicken and Noodles recipe is made with tender shredded chicken, Boursin, cheddar, Parmesan, and egg noodles in a rich, creamy sauce.
Place the boneless, skinless chicken breasts into the bottom of a Crockpot and season them with salt, pepper, and garlic powder.
Pour the cream of chicken soup and chicken broth over the chicken and add the Boursin cheese. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and tender enough to shred.
Using two forks, shred the chicken directly in the Crockpot and stir everything together until the sauce is smooth and creamy.
Stir in the freshly shredded cheddar cheese and grated Parmesan until completely melted and incorporated into the sauce.
Stir in the cooked egg noodles until they’re evenly coated in the cheesy chicken mixture. Garnish with freshly chopped parsley and serve warm. Enjoy!
