Chili Frito Corn Salad
This Chili Frito corn salad is made using canned corn, minced bell pepper and crispy Chili Fritos tossed together in mayonnaise for a delicious, crowd pleasing side dish.

- 30 Oz (2 cans) Canned Corn, drained very well
- 1 Medium Red Bell Pepper, minced
- 1 Cup Cheddar Cheese, hand shredded
- 1 Cup Monetary Jack Cheese, hand shredded
- 1 Cup Mayonnaise
- 1 Tbs Black Pepper
- ¼ Cup Fresh Parsley, chopped
- 9 Oz bag Chili Fritos
In a large bowl, add the drained corn, minced bell pepper, mayonnaise, cheeses, pepper and fresh parsley. Stir everything together until it’s evenly combined.
Semi crush the Chili Fritos (you don’t want to turn them to dust, just break them up a bit) and add them to the corn mixture. Be sure NOT to add the Fritos until just before serving or they will become soggy.
Next, stir the Fritos into the corn mixture, serve and enjoy!
