Chili Frito Corn Salad

This Chili Frito corn salad is made using canned corn, minced bell pepper and crispy Chili Fritos tossed together in mayonnaise for a delicious, crowd pleasing side dish.

Ingredients
  

  • 30 Oz (2 cans) Canned Corn, drained very well
  • 1 Medium Red Bell Pepper, minced
  • 1 Cup Cheddar Cheese, hand shredded
  • 1 Cup Monetary Jack Cheese, hand shredded
  • 1 Cup Mayonnaise
  • 1 Tbs Black Pepper
  • ¼ Cup Fresh Parsley, chopped
  • 9 Oz bag Chili Fritos

Instructions
 

  • In a large bowl, add the drained corn, minced bell pepper, mayonnaise, cheeses, pepper and fresh parsley. Stir everything together until it’s evenly combined.
  • Semi crush the Chili Fritos (you don’t want to turn them to dust, just break them up a bit) and add them to the corn mixture. Be sure NOT to add the Fritos until just before serving or they will become soggy.
  • Next, stir the Fritos into the corn mixture, serve and enjoy!
